Hokkien Char

Ingredients:
15 gm Premium Seafood Stock
6 nos. Shrimp, shelled & deveined
4 nos. Fish balls, sliced
59 gm Chicken/Pork, sliced
2 cloves Garlic, minced
118 gm Bean sprouts
177 gm Vermicelli, soaked in warm water until soft & drained
177 gm Yellow noodles, rinsed with cold water & drained
59 gm Choy sum/Chinese mustard green, cut into 2-inch length
2 1/2tbsp Soy sauce
1 ½ tbsp Thick soy sauce
2 tbsp Oil
¾ cup Water
3 dashes White pepper powder
Fried shallot crisps

Methods:
  1. Heat oil in pan, sauté some garlic till fragrant.
  2. Add in Chickens, shrimps, fish balls and stir fry till half cooked.
  3. Add in choy sum, bean sprouts, noodles, vermicelli and toss all the ingredients quickly with the spatula.
  4. Add in Premium Seafood Stock, soy sauce, thick soy sauce, water, and pepper and keep stirring until the noodles are cooked through.
  5. Dish out and garnish with some fried shallot crisps and can be serve with sambal belacan.
